When it comes to your baby having their first tastes and meals, it's a whole new world of learning! With my son now 15 months old, I thought I'd share some favourite recipes I have come across. Food that he loves, but is also easy to make and doesn't take too long. After all, as a Mum we never have enough time for anything!
This recipe for a Zucchini Slice is from a baby book but I have put my own twist on it! Age: 6 months +
Great for freezing!
Ingredients:
2 medium sized zucchinis, grated
1 small onion
1/2 cup grated cheese
1 cup self raising flour
2 tablespoons Olive Oil
4 large eggs
1 tablespoon dried oregano leaves
~ try adding in rindless bacon, finely chopped
~ try adding red capsicum, also finely chopped
Preheat oven to 180 degrees Celsius. Butter and line a cake tin approx. 20cm wide.
Combine zucchini, onion, cheese, oregano, and any extra's (such as bacon) in a bowl.
In a seperate bowl, combine the flour, oil and eggs. Mix well with a fork. Then combine the zucchini mixture.
Bake for 45 minutes or until golden brown on top. (you can also check it's set with a fork).
Let it cool before giving it to bub! I also recommend sitting it on a paper towel after removing from the tin.
My son absolutely loves this one! I have been giving it to him since about 9 months old and he will happily eat it on his own using his fingers.
